Bidra med feedbackEight of us visited this remarkable restaurant for a Sunday lunch. Location of strong value. An historical building that used to be directly connected to the nearby castle respectfully revamped with modern internal architecture. An important project, not only for the young talented DiGennaro brothers but for their hometown too. The seven course menu quintessential has been sapiently paired with a vegan menu for myself. Worth a mention my potatoes and truffle dish, extremely delicate although with strong, elegant contrasts. Unfortunately we initially picked bottles of our liking without really reading the interaction with our dishes as we did not see a wine pairing solution suggested on their menu. Saverio, the sommelier brother guided us with the last two bottles. For the next time, I would welcome a more structured wine pairing solution. Elegant yet informal service. We strongly appreciated the friendly and welcoming approach. I 'll be back!
Atmosphere: Absolutely pleasant! The place is built with the traditional sand stones, like many old buildings in Puglia, it is spacious, luminous and elegantly decorated. The wine cellar is a must view, absolutely beautiful (and you can also ask to dine there, there is a round table! Service: A beautiful balance between courtesy and warmth. Everyone was knowledgeable, kind and somehow familiar and close. Food: We did the Quintessenziale tasting, which is the seasonal one. All the dishes were delicate, nicely excecuted and flavorful. My absolute favorite was the cicala . The olive oil produced by the chef 's dad was a total gem that distinctive bitterness of high quality Puglia oil. The restaurant looks very nice and comfortable. Nothing too fancy. The food is delicious. The staff was very friendly and explained a lot about the dishes and wines that we tried. We met the owner at the end and he took us to the rooftop and talked about his future plans. Highly recommended
BEST RESTAURANT IN ITALY!!! Traveling throughout Italy the last 6 weeks has been amazing. But, nothing compares with this. Michelin got it right this time in selecting this well rounded experience to represent it’s reputation. Quintessenza is beautiful, unassuming, inviting, and best of all, serves unbelievably amazing food. Our food selection was their Classici 2011-2021 menu, which takes you through their evolution from the opening of their restaurant until now, as well as the wine paring. Each dish and wine, pared with the explanation as to the inspiration, it’s background, ingredients and knowledgeable, courteous staff, exceeded expectation. From the beautiful presentation to the juggling of taste and textures, each dish contributed to an unimaginable experience. This restaurant is Paradise for foodies and lovers of amazing people who love what they do and the people they host.
Fabulous Michelin starred restaurant. Run by 4 brothers. We were treated to an amazing meal and even a tour of the property. Our table faced the floodlit castle. Slightly off the beaten track but well worth the 15 minute stroll from the centre. Highly recommended.
