Excellent pinsa I would say, unfortunately it is served on a wooden tray with yellow paper on it, which inevitably in the case of buffalo mozzarella which runs and melts, moistens the bottom and the yellow paper becomes a mush mixed with the bottom of the pinsa dough, so you you find yourself eating paper and dough, which is neither nice to look at nor healthy I think, I deduce that it also happens for other condiments or at least for the heat between the pinsa and the wood. TO FAIL Enough of this yellow paper, or perhaps the one from Pinseria Lab is poor quality paper
