I had read some really excellent reviews about this place and was looking forward to a fantastic meal. It started well. Although there was no mixed salad on the menu, we asked for one anyway, and they came up with an excellent (and very well-priced) salad with all the usual ingredients. The tortillitas de camerones were not nearly as impressive. Crisp on the outside, but decidedly soggy in the middle. I think they were probably frozen The steak was, on the other hand, excellent and it was done to a T. My wife asked for hers rare and rare it was, while my daughter and I asked for medium-rare and that's what we got... The service was OK, although they did try to serve us with little bottles of Don Simon tinto de verano rather than mixing it fresh which is what one would expect from a place claiming to have high standards. When we complained, they did change them.
We seem to return to this restaurant quite frequently since we first came across it last year. We go there because we enjoy really good meat. There are lots of other good, imaginative items on the menu and we always enjoy one of them for a first course. If you’ve read my reviews before, you will know I’m a bit of a bore about meat, where it should come from, how long it should be kept before being eaten (hung? and how to make sure it comes to the table piping hot, ideally with a mini-barbecue at the table. Well, this restaurant meets the first two conditions to perfection. The third condition is not so well met but it doesn’t seem to matter. There is another restaurant in the area (La Castilleria in Santa Lucía where the same is true. The meat is so good, tasty and tender that you lap it up before you notice that the last bits are no longer hot. For the quality of meat we enjoyed, El Establo is very reasonable in price. We spent less than €50 including a shared first course, beers, wine and some fino. It stays open in the quiet months, except on Tuesdays. Highly recommended!
We were on a saturdat at noon. As we were the only customers (we were told nights are more crowdy), the chef prepared the dishes just for us; he explained every detail of how they were made up, and everything was very original... and delicious.
