Cafe Rio Mexican Grill - Castle Rock

That is one of my favorite places to eat. I always get the barbacoa quesadilla. it's really good! they have a great variety on their menu, but I always tend to go back to the barbacoa because that is my preferred. my man loves the steak and my daughter the vegetarian options for creating her own burrito, salats or whatever she wants.

Always good quality, the family enjoys what is rare. the prices have unfortunately become much higher or we would eat more often there. it is now dinner prices sit, but quickly eat experience. expect $12ish for an salat or burrito and then add to drink or snack.

There is no better place to get fresh burritos, enchiladas, and bowls, of amazingly fresh ingredients concocted before your eyes!! They even go so far as to hand craft and cook their own flour tortillas at the beginning of the line. Should you choose a burrito, such as I did, you choose rice and or beans and your type of meat, sweet pork for me. Select your favorite degree of hot sauce, mild in my case, but you can get as hot as you like, add cheese, and then smother it enchilada style, for a small extra fee. That gives you more sauce on type and more cheese, and a pass through the grill to melt it all just perfectly. Finally top with veggies, and add Pico, guacamole, and/or sour cream if you wish, and you have your masterpiece. Pair with a freshly made tea or an ice cold soda and enjoy! If Cafe Rio was available as widely as Chipotle or Qdoba, the latter would be in big trouble. 10 Stars!!!

I love cafe rio and there food never disappoints except today!Unfortunately when I was eating my salad bowl I had rice, lettuce, a tortilla and that was it.It was crunchy and I got many undercooked rice pieces. Not to sound dramatic but I genuinely felt like my teeth were going to break from unknowningly eating hard uncooked rice.Not the best experience
