As far as I know, it is the only place in the Aizawa district where you can taste the Shirakawa style. I ordered the Chuka Soba with firm noodles. The bowl came with three slices of chashu that had been processed at a low temperature, as well as seaweed, naruto, and some watercress. The impression was different from the traditional Shirakawa style. The noodles were the familiar thick and curly type. The bowl arrived just 5 minutes after ordering, and the soup had a notably dark soy sauce color. Taking a sip, the strong soy sauce flavor matched the appearance, and I found it to be quite pleasing. The noodles were not overly firm, and I think they would be on the softer side if ordered normally. Thanks to the low-temperature processing, the chashu had minimal fat, was tender, and had a unique texture with a satisfying chew. With its quick service and overall quality, this ramen shop is recommended for weekday lunches as well.
This restaurant is easy to find as it faces a large road. I ordered the char siu with both lean and fatty cuts. The curly handmade noodles and the flavorful char siu were absolutely delicious. They also offered additional green onions on the side, which was a nice touch. Although I haven't lived long, this was the best Chinese ramen I've ever had. I definitely want to come back to eat it again. If you're looking for a hidden gem ramen spot, be sure to check this place out!
