A great place in the heart of Amsterdam. It's very quiet. There is a terrace on the waterfront. The terrace is bumpy and so the chairs and tables wobble every now and then. The best restaurant experience we have ever had. My wife and I have been doing a Michelin star restaurant tour over the past couple of years. Spectrum, in our view, presented us with a fabulous meal, where dish after dish would exude creativity, presentation, and a taste. The staff were professorial and playful. They accommodated our allergies the chef improvised on the spot but swapping out certain ingredients. Highlights include the watermelon/mint/tomato dish, the cockles, the sepia, venison, the and chocolate/weed (non THC) cake. A non-pretentious setting, great quality ingredients, amazing textures, just the right quantity, extraordinary tastes, and a great staff. If you are in Europe, this place is worth being a destination.
