Alberobello, where the limestone stones chipped and worked to compose the typical dry stone walls rise in a conical shape to create typical homes of the area: the Trulli. A little out of the way from the more touristy area, we discover the Basilico Rosso pizzeria. The gourmet proposals herald an invitation to dance for the palate.... and reality confirms expectations. The eye can hardly overlook the Pasqualino . A base of melted caciocavallo, islands of burrata flavored with caper powder on which bars of seared tuna glazed with honey sail with their sails of dehydrated salami. Among the many, there is the Inedita with fior di latte mozzarella, courgette cream pour, Martina Franca capocollo arranged in a basin which collects the burrata flavored with dried tomatoes. Then a poem, the transformation of a popular saying into a culinary work, Don 't let the farmer know... ...how good cheese is with pears: fior di latte mozzarella, pear chutney, gorgonzola, herb lard with valerian garnish and dehydrated pears. To close, a surgical touch to a classic dessert. Deprive Tiramisu of its backbone of ladyfingers and give it a heart of Brownies. The intervention is perfect with its result: “Tiramisu Brownies”. Returning is a given.
Excellent pizza for the products they use. Fresh and high quality. Well done!
We ate with friends, we took pizzas at the table center to taste different. We finally ate more than one pizza in our head. High quality products give an equally excellent taste. Digestible pizza, very good home dessert, refined and non-commercial super-alcoholics. It was not a pizza, but an experience to do again
